Cookie Sandwich Baking Kit
Our Mini Cookie Sandwiches are made with homemade buttercream sandwiched between two mini fresh baked Ghirardelli Milk Chocolate Chip Cookies, rolled in sprinkles. Now you can bake and assemble them while stuck at home during the coronavirus COVID-19 quarantine! We’ve included everything you need to 12 Mini Cookie Sandwiches (or feel free to make fewer Giant Cookie Sandwiches if you prefer:), without leaving your home for a trip to the grocery store. Each kit includes:
- A quart of fresh scratch made chocolate chip cookie batter
- 14oz of our signature buttercream frosting in a disposable piping bag (just cut off tip and squeeze bag), in your choice of flavors and colors
- Two 2oz containers of sprinkles, choose from jimmies or sugar sprinkles in many colors
Directions: Let batter warm up to room temperature, scoop with a small ice cream scoop or spoon (roll dough into ball if using spoon), place evenly spaced onto an ungreased cookie sheet, gently flatten each cookie with clean hand, bake at 350 degrees in a preheated oven approximately 8-10 minutes until cookies lightly brown (baking time will vary), cool completely before frosting. Flip cooled cookie upside down and squeeze a large dollop of buttercream in center, place another cookie on top and push together until buttercream is level with sides of sandwich. Pour sprinkles onto a paper plate, roll exposed edges of buttercream in sprinkles.
Storage: Store cookie sandwiches at room temperature in an airtight container for 2-3 days, they also freeze well.
